I have used point and shoot cameras for 2 years and would love to graduate to digital SLR cameras.
I would prefer a camera which is not too new in the market.

I happen to like the E series digital SLR's from Olympus. At ten megapixel's, the camera's lens is astoundingly sharp and the whole enchilada will cost you well within your budget. Check some of the sites like B&H Photo. Be wary of kits that offer you a bunch of stuff you don't need. There's also a package deal with two zooms for the E-510. Great feeling camera in the hand as well.

I'm interested in wildlife and like photographing animals mostly. Is it worth getting an SLR camera? I've heard the lenses and stuff are expensive. Maybe I should just get basic good quality digital camera?

You can find an entry level DSLR for about $450 new and as little as $300 used. You can get a film SLR for about $200 new and as little as $50 used. For used cameras check your local classifieds, you can find some great deals. For new cameras, check around local camera shops and internet shops. When the Olympus E-520 came out, I was able to pick up a new E-510 for $450 new with lens. A good point and shoot will cost $100 - $200. You can get some acceptable ones for a bit less.
